Instructions
Slice or Dice the onions into rings, half rings large pieces or small pieces. The decision is yours. Remember the larger the piece the longer it will take to cook.
Add the olive oil to the pan and bring up to a medium heat. We want to fry the onion and not boil it. Add the onion and cook for about 5 minutes.
Add the thyme and optional extra's and continue to fry the onions until golden in color.
Add the Sugar. Keep the pan at the same temperature and don't forget to stir. About 10 minutes in you will notice the onion is starting to look candied.
Add the vinegar. Once again keep the pan at the same temperature mixing on a regular basis. Reduce the temperature slightly and let the liquid reduce for about 15 minutes.
Take of the heat and Bottle. Remember to clean the bottles before you bottle the Jam as there is very little to prevent it going off.
