
Onion Jam
Onion Jam is such a versatile addition for the fridge. I make sure that I have at least 1 full jar at all times.
Ingredients
- 4 Whole Onions Medium to large in size
- 1 tbsp olive oil
- 1 tsp Thyme Dried not fresh
- 250 ml Brown Sugar
- 250 ml Brown Vinegar (check the label to ensure that there is no Sodium Benzoate used as a preservative)
- 1 g Salt To taste
- 1 g Pepper to taste
Instructions
- Slice or Dice the onions into rings, half rings large pieces or small pieces. The decision is yours. Remember the larger the piece the longer it will take to cook.
- Add the olive oil to the pan and bring up to a medium heat. We want to fry the onion and not boil it. Add the onion and cook for about 5 minutes.
- Add the thyme and optional extra's and continue to fry the onions until golden in color.
- Add the Sugar. Keep the pan at the same temperature and don't forget to stir. About 10 minutes in you will notice the onion is starting to look candied.
- Add the vinegar. Once again keep the pan at the same temperature mixing on a regular basis. Reduce the temperature slightly and let the liquid reduce for about 15 minutes.
- Take of the heat and Bottle. Remember to clean the bottles before you bottle the Jam as there is very little to prevent it going off.
